Cool And Refreshing Summer Soups

If you’re a fan of soup in the fall and winter, why not serve some up in the summer? There are many delicious recipes for chilled ones, ranging from sweet to tangy.

Consider the possibilities: watermelon, tomato, cucumber yogurt, sweet corn and more. Some even contain unexpected ingredients, such as pumpkin (see the recipe below). Better yet, they’re simple to make.

Cucumber and Pumpkin Chilled Soup

  • 1 16 oz. can of unsweetened pumpkin puree

  • 1 large English cucumber (peeled and diced)

  • 1 small yellow onion

  • 2 tbsp plain Greek yogurt

  • 1 tbsp cumin

  • 1 tsp cinnamon

  • 2 tbsp olive oil

  • 2 tbsp sherry vinegar

  • ½ tsp vanilla extract

  • ¾ cup water

  • Salt and pepper to taste

1. Sauté olive oil, diced onions and a pinch of salt and pepper over medium heat for 3 to 5 minutes or until slightly translucent.

2. In a blender, combine pumpkin, water, yogurt and cucumber and blend until smooth. Remove top and add in all of the remaining ingredients. Blend, then season with salt and pepper to taste.

3. Optional: Garnish with feta cheese and diced cucumber.
