Pack A Healthier Picnic

Planning a picnic? Skip the chips, fried chicken, mayo-laden salads, fatty hot dogs and rich brownies. Instead, opt for fresh and flavorful summer fruits, veggies and lean meats.

Here are some simple ways to make your next beach or park outing both filling and unforgettable:

Sneak in veggies wherever you can—as salads, on sandwiches, as side dishes. Use all the colors of the rainbow—peppers, lettuce, tomatoes, shredded carrots.

Go lean. Instead of grilling beef patties or pork hot dogs, serve turkey or chicken sliders or franks. Be sure to pile on lettuce and tomato.

Use the “no white” rule. Substitute whole grain bread and pasta salad for the white variety, and serve sweet potatoes instead of white ones. Whole grain products are healthier than starches; they will also leave you feeling full longer.

Replace fattening mayo with mustard or vinaigrette. You can still eat potato salad; just prepare it differently. Use canola oil and seasoned rice vinegar instead of mayo. Instead of cole slaw, create a salad using cabbage, carrots, fresh dill, cider vinegar, honey and Dijon mustard. Yum!

Opt for healthier sweets. Serve wedges of watermelon, bunches of grapes or crisp apples instead of the usual brownies and cookies. Or try strawberry shortcake (and go easy on the cake!)

Think out of the box, ahem, basket. Instead of the usual cookout fare, consider serving lobster rolls, crab sliders, an antipasto chicken sandwich, pork kebabs or grilled veggie and hummus wraps.
