A Sweet And Savory Summer Delight

Berries are in season, and they’re good for more than just dressing up your cereal or ice cream.

We often infuse them into our meat sauces, sprinkle them on a salad and include them in a charcuterie board—either fresh or as a jam. They complement prosciutto, as well as manchego cheese. We’ve even added them to pizza!

Here’s a delicious but simple blackberry recipe:

Spicy Blackberry & Thyme Jam

  • 4 cups blackberries

  • 1 cup warm water

  • ½ envelope gelatin ( ½ tsp)

  • 1 cup sugar

  • 1 tbsp minced thyme

  • 1 tsp red chili flakes

In a large pot smash the blackberries with a fork or whisk. Dissolve gelatin in warm water and add into berries, as well as sugar. Bring mixture to a rolling boil, stirring constantly.

Boil for 1 minute, stirring constantly. Remove from heat and quickly skim off foam with a metal spoon. Stir in thyme and chili flakes. Chill and enjoy!
